If the analysis shows the milk to contain more than 88 per cent Of water, or less than 12 per cent of sol ids, or less than 3 per cent of fat, the law deems such milk adulterated. Bearing this in mind, let us take for illustration the results Of an analysis of milk, which showed: The ash is frequently not estimated. For analysts to calculate the milk as watered in such cases is an unwarranted and questionable license. In the absence of evidence to show that the above milk had been skimmed, the data would indi cate that the milk had been watered at least per cent.Since the law admits the possibility of 88 per cent Of water in pure milk and the analysis disclosed the presence of a total of only per cent of water, it gen erally puzzles the uninitiated how it is possible to state that the milk had been watered per cent, as the excess over the limit set by law is only per cent.
